Roasted Red Pepper Hummus

Sometimes I opt for pre-made foods that I can easily make myself. While I will let myself do this during the school year, I have no more excuses right now! I found myself wanting more roasted red pepper hummus after finishing off the container I bought at the g-store, so I decided to make some!

Roasted Red Pepper Hummus

Ingredients
-2 cans chickpeas
-water
-EVOO
-1 jar roasted red peppers
-5-6 garlic cloves
-salt (3 twists on the grinder)

Directions
Add drained chickpeas to high-powered blender or food processor. Add enough water and EVOO so it will process. Add chopped roasted red peppers and a little of the juice for more flav! Then add minced garlic and blend until smooth. I added a little salt after I poured the hummus into a container. If you don't like a lot of garlic, you'll definitely want to reduce the amount in this recipe to 3 cloves.


My favorite way to eat hummus is on a wrap topped with veggies!

This hummus was delicious and had quite a kick!


I do realize that most hummus is made with lemon juice or tahini. Honestly, it tastes the same if you leave them out! I usually add lemon juice, but I forgot this time. As for the tahini, it's a little overrated at $10 a jar.

I'm off to read...for pleasure! :) I'm reading a book called Shades of Blue by Karen Kingsbury and I am so into it! I'm hoping to finish it by the end of the weekend! Have a nice Saturday!
