Quick and Easy Meals!

Busy weeks call for easy meals! The last thing I want to do when I come home from a busy day is cook a meal that takes forever! While I'm usually in search of something easy, the last thing I want to do is choose something unhealthy because it's convenient. Luckily, I have a few go-to "recipes" that are great for busy nights.

My favorite, easy meal to make is soup! No, not just pouring canned soup into a bowl and heating it up...there's more to it! I usually use a hearty soup as my "soup base." A great soup is Amy's Lentil Vegetable. While I let the soup warm up on the stove, I steam veggies in the microwave! Carrots, peas, broccoli, squash, or just about any vegetable would go well in this soup! Throw in some onions or garlic if you have some on hand too! Once the vegetables are defrosted and steamed (frozen veggies are the easiest to use on busy nights), mix them in with the soup! Allow the veggies to simmer with the soup to absorb the flavors for a few minutes. Add any spices you want (e.g., pepper) and then you're done! This whole process probably takes around 15 minutes total. This meal is great because it combines protein (lentils), vegetables, and a whole grain if you add a piece of bread!




My second go-to meal would be a pasta salad. You can combine any sort of pasta or quick-cooking grain, veggies, pre-cooked chicken, fish, or canned beans and choose a vinaigrette/dressing to tie it all together! Recently, I combined Israeli couscous, veggies, and an onion. After sauteing the veggies + onion I mixed them with the couscous. This meal came together perfectly after I added some EVOO and seasoning. I usually would have added a little more to this, but I was trying to use up everything in my pantry before I went out of town.





Lastly, when I absolutely have no time or if I am getting ready to go out of town, a small sweet potato and hearty soup will do the trick!

Luray

Hey everyone! I hope you all had a good weekend. The bf and I took this weekend off because he'll be across the country for a summer internship. Plus, by the time he gets back...I'll be gone! It's crazy to think that the next time we'll see each other it'll be me visiting JMU. I never thought the day would come where JMU wasn't my home. It's been 6 fun years...well mostly fun. ;)

Saturday he came up with the great idea to go to Luray, VA for the day. After grabbing some coffee and tea, we explored the town for a little while. We found this awesome art gallery called the Warehouse Art Gallery. It would be the perfect setting for numerous parties/functions...see what I mean? After hitting a few more shops we decided to grab a late lunch at Artisans Grill. I got a HUGE veggie burger and sweet potato fries. It was seriously one of the best veggie burgers I've ever had, and I think I said that 50 times while eating it! After consuming nearly 1,000 calories in one sitting, we went on a nice 3ish mile walk along the river. Here are a few pictures...








We made it back to the 'burg after hitting up a roadside custard stand on our way back. Once we were back, I collapsed until it was time for dinner. How embarrassing is it that 3 miles exhausted me!? I will say...it was super hot...although that's not much of an excuse haha. 2-3 weeks of working on my thesis in my room all day is not doing me any good. I'm going to start doing some form of exercise every day. I forgot how active I was while in school because I was walking across campus multiple times a day.

On another note, I'll be in VB this Friday through the following Sunday! While it won't be a beach party every day (I'll still be working on my thesis), I'm looking forward to going to the beach and catching up with family and friends. The reason I'm going the entire week is because one of my bff's has her wedding reception memorial day weekend and the other has her bridal shower the following weekend. With gas nearing $4/gallon, I wasn't about to shell out 2 tanks worth of gas just to drive down 2x. I'm not complaining :) I'm off to work on my thesis and then take some time to read!
